Τις τελευταίες δύο δεκαετίες έχει παραχθεί σε παγκόσμιο επίπεδο ένας τεράστιος όγκος μικροβιολογικών δεδομένων που σχετίζονται με την ασφάλεια των τροφίμων. Τα δεδομένα αυτά περιλαμβάνονται κατά κύριο λόγο σε εργασίες που έχουν δημοσιευτεί σε διεθνή επιστημονικά περιοδικά και αρκετές από αυτές έχουν αναρτηθεί στο διαδίκτυο, με αποτέλεσμα οι ενδιαφερόμενοι να έχουν εύκολη πρόσβαση σε αυτές μέσω των φιλικών στο χρήστη διαδικτυακών εργαλείων. Ωστόσο, έχει διαπιστωθεί ότι τα δεδομένα που περιλαμβάνονται στις εργασίες αυτές είτε δεν είναι εξ’ ολοκλήρου διαθέσιμα ή δεν παρουσιάζονται με οπτικά εύληπτο τρόπο. Επιπλέον, υψηλής ποιότητας χρήσιμα επιστημονικά δεδομένα συχνά δεν συγκεντρώνουν τον απαιτούμενο όγκο που προϋποθέτει η δημοσίευσή τους σε επιστημονικά περιοδικά. Η ανάγκη λοιπόν για τη συστηματοποίηση όλων των πειραματικών μικροβιολογικών δεδομένων για την έγκαιρη πρόβλεψη των πιθανών κινδύνων υποβάθμισης της μικροβιολογικής ποιότητας των τροφίμων ή/και της ασφάλειάς τους, σε σχέση με τις διαδικασίες παραγωγής και αποθήκευσής τους, αποτέλεσαν σημαντικό κίνητρο για την ανάπτυξη μιας βάσης δεδομένων που θα περιέχει-συνδυάζει τις πληροφορίες αυτές. Έτσι, στα πλαίσια εκπόνησης της διατριβής αναπτύχθηκε η βάση δεδομένων LabBase, η οποία εμπεριέχει δεδομένα της απόκρισης των μικροοργανισμών των τροφίμων στις διαφορετικές φυσικοχημικές και περιβαλλοντικές συνθήκες. Οι χρήστες του λογισμικού αυτού έχουν πρόσβαση σε στοιχεία που επιτρέπουν τη(ν): (i) σύγκριση της απόκρισης των μικροοργανισμών μεταξύ διαφορετικών ειδών τροφίμων, (ii) ανάπτυξη σεναρίων για την ανθεκτικότητα νέων τροφίμων, και (iii) εκτίμηση πιθανών κινδύνων υποβάθμισης της μικροβιολογικής ποιότητας κατά την παραγωγή των τροφίμων.
Στη συνέχεια, αναπτύχθηκαν δύο επιπλέον λογισμικά για την πρόβλεψη της ανάπτυξης των μικροοργανισμών στα τρόφιμα, τα οποία εντάσσονται στον τομέα της πρόβλεψης της μικροβιολογικής αλλοίωσης των τροφίμων. Από αυτά, το λογισμικό UGPM αφορά στην προσομοίωση της ανάπτυξης των μικροοργανισμών στα τρόφιμα υπό δυναμικές και στατικές συνθήκες θερμοκρασίας. Κίνητρο για την ανάπτυξή του αποτέλεσε το γεγονός ότι τα υφιστάμενα έως τώρα λογισμικά είτε διατίθενται μόνο για εμπορική χρήση ή ενσωματώνουν στον κώδικα τα μικροβιακά μοντέλα, με αποτέλεσμα να μην επιτρέπουν στο χρήστη να εισάγει νέα μοντέλα. Επιπρόσθετα, τα ενσωματωμένα μοντέλα βασίζονται είτε σε εργαστηριακά δεδομένα ή προέρχονται από περιορισμένους συνδυασμούς τροφίμων και μικροοργανισμών. Ο μηχανισμός λειτουργίας του λογισμικού UGPM βασίζεται στο διαφορικό μοντέλο των Baranyi & Roberts (1994) σε συνδυασμό με το δευτεροταγές μοντέλο τετραγωνικής ρίζας των Ratkowsky et al (1984). Η χρήση του λογισμικού που αναπτύχθηκε επιτρέπει αφενός την πρόβλεψη της δυναμικής των πληθυσμών υπό μεταβαλλόμενες και στατικές συνθήκες θερμοκρασίας, αφετέρου δε την προσομοίωση της αύξησης των μικροοργανισμών σε συνθήκες αποθήκευσης και διακίνησης των τροφίμων. Έτσι, το λογισμικό αυτό αναμένεται να αποτελέσει ένα ιδιαίτερο χρήσιμο –και εύχρηστο- εργαλείο ακόμα και για μη εξειδικευμένους χρήστες.
Το τρίτο λογισμικό που αναπτύχθηκε (GroPIN) σχετίζεται με την πρόβλεψη τόσο της μεσεπιφάνειας ανάπτυξης/μη ανάπτυξης, όσο και με αυτήν της ανάπτυξης/αδρανοποίησης των μικροοργανισμών στα τρόφιμα υπό στατικές συνθήκες. Κίνητρο για την ανάπτυξή του αποτέλεσε το γεγονός ότι είναι εξαιρετικά περιορισμένα τα υφιστάμενα αντίστοιχα λογισμικά και κανένα τους δεν έχει τις δυνατότητες πρόβλεψης που παρέχει το νέο λογισμικό GroPIN. Ο βασικός μηχανισμός του νέου λογισμικού βασίζεται στην επίλυση του μοντέλου πρόβλεψης της πιθανότητας ανάπτυξης ή μη ανάπτυξης των μικροοργανισμών των τροφίμων καθώς και στο διαφορικό μοντέλο των Baranyi & Roberts (1994). Επιπλέον περιλαμβάνει τη δυνατότητα επίλυσης μοντέλων επιφανειών απόκρισης. Η χρήση του λογισμικού αυτού επιτρέπει την αξιολόγηση του πιθανού κινδύνου από την αύξηση των μικροοργανισμών στα τρόφιμα. Τα μικροβιακά μοντέλα που περιλαμβάνονται στο λογισμικό δείχνουν ποιοι μικροοργανισμοί είναι δυνατό να αναπτυχθούν σε ένα προϊόν και εάν αναπτυχθούν, με τι ταχύτητα θα λάβει χώρα η ανάπτυξή τους.
Ο ανάπτυξη των τριών λογισμικών συνιστά ένα πακέτο μικροβιολογικού λογισμικού το οποίο συνδυαστικά μπορεί να αξιοποιηθεί τόσο από τη βιομηχανία τροφίμων όσο και από ερευνητικά εργαστήρια για: (i) την πρόβλεψη της επίδρασης των νέων συντηρητικών/αντιμικροβιακών στη μικροβιακή ανάπτυξη, (ii) την πρόβλεψη της μικροβιακής σταθερότητας νέων προϊόντων που προέρχονται από κλασσικά προϊόντα κατόπιν αλλαγής της σύστασής τους, (iii) το σχεδιασμό νέων πειραμάτων, αφού θα είναι δυνατή η εκ των προτέρων εκτίμηση των προσδοκώμενων αποτελεσμάτων αλλά και της πορείας η οποία πρόκειται να ακολουθηθεί. (iv) το σχεδιασμό νέων τροφίμων, με βάση τη χρήση των πληροφοριών από τη βάση δεδομένων (σχετικά με παραπλήσια προϊόντα) σε συνδυασμό με την εκτίμηση των κινδύνων μικροβιακής μόλυνσης από τα λογισμικά μαθηματικής μοντελοποίησης.
Over the past two decades, an enormous volume of microbiological data has
been produced worldwide and it is readily available mainly via papers which have
been published in international journals. The deployment of international databases
and search engines for searching and accessing relevant papers in academic journals,
archives or other collections have contributed decisively to the rapid spread of such
information. However, the data included in these reports are not fully available, or not
always with a meaningful visual way. On the other hand, the effective use of
published knowledge requires high academic background and the ability of searching
for the appropriate sources of information.
On the other hand, scientific data of high
quality is not included into scientific journals, due to their low quantity. Therefore, the
motivation for LabBase database development was the need for systematization of
experimental microbiological data and anticipating the potential risks of the foods
microbial quality/safety deterioration during their production or storage.
LabBase
database incorporates compiled data used to predict the growth, survival and death of
microbial populations in foods, depending on the intrinsic food properties and the
environmental factors.
The use of this software allows: (i) The comparison of the
microbial responses between the different types of foods, (ii) the design of new food
products, and (iii) the assessment of the potential risks of the degradation of the foods
microbial quality during manufacturing.
Growth models are fundamental tools in predictive microbiology, especially
for Ready-to-Eat foods, since they may assess the exposure of consumers to the doses
(levels) of pathogenic bacteria at the time of consumption. Several predictive
modeling software have been developed in order to provide predictions of microbial
responses in foods by controlling environmental and physicochemical factors and/or
food additives. Although, most of these programs are locked and the modification of
their models or the addition of new models is not feasible or requires authorization.
Furthermore, the embedded models are based mainly on data from laboratory media or from limited combinations of foods and microorganisms. Therefore, the motivation
for UGPM tertiary model development was the need for a readily available and user -
friendly software, encompassing various food-microorganism-specific growth models.

simulation of microbial growth is obtained via the primary model of Baranyi, using
momentary growth rates estimates in response to temperature, obtained by square root
secondary models.
It is capable of providing predictions for the population dynamics
of the selected microorganisms-food combinations under static and dynamic
temperature conditions.
UGPM software is a valuable decision support tool for the
Food Industry, by assisting in the management of foods based on their actual shelf-life
and microbial safety, thereby limiting the deterministic “best-by” practice for the
determination of shelf-life. The latter is commonly based solely on empirical
observations and has high uncertainty. This in turn, may result in the rejection of large
quantities of unspoiled or safe foods, or even in the distribution of spoiled and unsafe
foods, due to ignorance of the effect of temperature abuse on the microbial spoilage
and safety of products.
While several food microbial predictive software have been developed in
order to provide microbial growth-inactivation kinetics, only a few predictive tools
can comprehensively explore various kinds of microbial growth/no growth conditions,
and none can explore both growth/no growth conditions and growth-inactivation
kinetics under static conditions, simultaneously. GroPIN software constitutes a
tertiary simulation model, providing predictions related to the above basic described
functions, including the development of ordinary and time-to x log response surface
models. GroPIN software includes a microbial models database, where each equation
constitutes a datum, instead of being integrated in the programming language.
GroPIN
provides information concerning growth/no growth boundary conditions and the
kinetics of microorganisms in the case of growth. This software contributes decisively
to the efficient and safe production and distribution of processed foods.
The combination of the individual software described above, constitutes a
software package, which can be exploited by the Food Industry and the Research
Laboratories in order: (i) To predict the effect of the new preservatives and
antimicrobial compounds on microbial growth. (ii) To predict the microbial stability
of the new products derived from traditional foods, after changing their composition.
(iii) The design of new experiments, since it will be possible to assess the expected results and the experimental procedures which are going to be implemented. (iv) The
design of new food products based on the information derived from database (related
to similar products) in conjunction with assessing the risk of microbial contamination,
derived from the tertiary models. UGPM and LabBase software applications are
