Διερεύνηση ευρημάτων επιθεωρήσεων συστημάτων διαχείρισης επιχειρήσεων τροφίμων

Abstract

Σκοπός της παρούσας μεταπτυχιακής εργασίας είναι η διερεύνηση των ευρημάτων επιθεωρήσεων, μέσα από την μελέτη συστημάτων διαχείρισης που εφαρμόζονται σε πιστοποιημένες επιχειρήσεις τροφίμων και γεωργικής εκμετάλλευσης. Συγκεκριμένα, μελετήθηκαν διεξοδικώς δύο συστήματα ποιότητας και ασφάλειας τροφίμων, καθώς επίσης δύο συστήματα ποιότητας που αφορούν την πρωτογενή παραγωγή. Τα ευρήματα των επιθεωρήσεων προέκυψαν από ετήσια και τριετή πιστοποιητικά που εκδόθηκαν από τον φορέα πιστοποίησης Lloyd's Register. Η εργασία χωρίζεται σε τρία μέρη. Στο πρώτο μέρος γίνεται μια αναφορά στο θεσμικό πλαίσιο της πιστοποίησης, στους φορείς και στα πρότυπα που εφαρμόζονται σε επιχειρήσεις τροφίμων και γεωργίας. Στο δεύτερο μέρος γίνεται μια μελέτη του κλάδου των φορέων πιστοποίησης και αναλυτική παρουσίαση του φορέα πιστοποίησης Lloyd's Register και του παγκόσμιου δικτύου, από τον οποίον προέκυψαν τα δεδομένα της παρούσας μελέτης. Ενώ στο τρίτο μέρος της εργασίας, γίνεται αναφορά στους κλάδους των επιχειρήσεων που μελετήθηκαν και κατ’ επέκταση παρουσίαση και ανάλυση των ευρημάτων που εντοπίστηκαν. Η μεθοδολογία που χρησιμοποιήθηκε είναι απλές στατιστικές τεχνικές και pivot tables για την ομαδοποίηση των εταιρειών. Επίσης χρησιμοποιήθηκε ένα βασικό εργαλείο για την ποιότητα που χρησιμεύει για την επίλυση κρίσιμων προβλημάτων και ονομάζεται Pareto chart ή Pareto analysis.

The purpose of this thesis is to investigate the findings of inspections, as those arise from the assessment of food and agricultural companies against the requirements of a number of food safety international standards. The findings of the inspections resulted from annual and three- year licenses issued by Lloyd's Register, an English certification body. In the first part we quote the definitions of qualit y through historic events. Afterwards we introduce the meaning of certification and the benefits that arising from it. We analysed the most important international standards which related with safet y and qualit y issues. The second part is a study of industry certification bodies and especially of the Lloyd's Register and the global network. We analyse the external environment through PEST analysis and we investigate the industry of Certificat ion Bodies (Task Environment) with the Porter’s model. With this strategic tool we can analyse the industry and the competitors by rating there forces. At the most important part of this study (third part) we present businesses of food and agricultural products and we analyse the findings that resulted from third part inspections. The methodology we use is simple statistical techniques and pivot tables for grouping the companies. Also we used a basic tool for the qualit y which can solve t he majority of critical problems that a company could face. This important tool called Pareto chart or Pareto analysis.
