Το τυρί αποτελεί ένα βασικό προϊόν για τη διατροφή του ανθρώπου και η σταδιακή αύξηση της ζήτησης του, επιφέρει συνολική ανάπτυξη για τον κλάδο εμπορίας τυριού. Η μόλυνση του τυριού είναι ένα συχνό φαινόμενο, γεγονός που ταλανίζει επί δεκαετίες. Η ανάπτυξη παθογόνων μικροοργανισμών τόσο κατά την αποθήκευση (ιδίως όταν αυτή συμβαίνει εν απουσία κατάλληλης συσκευασίας), όσο και κατά τη μεταφορά, υποβαθμίζει την ασφάλεια και την ποιότητα του τυριού, προκαλώντας σημαντικές απώλειες για τις εταιρείες που δραστηριοποιούνται στο συγκεκριμένο κλάδο. Οι συμβατικές συσκευασίες ωστόσο, στηρίζονται ως επί τω πλείστων σε υλικά που έχουν ως βάση το πετρέλαιο (πλαστικό). Το σύγχρονο αίτημα των καταναλωτών για μείωση των συντηρητικών και την μείωση της εξάρτησης από πλαστικές συσκευασίες, έρχεται σε αρμονία με την παρούσα εργασία, η οποία πέραν των φιλμ που αποτελούνται από άλας αλγινικού οξέος και ζεόλιθου, η καινοτομία της κρύβεται στην παρουσίαση υλικών που μπορούν να εμβαπτιστούν απευθείας στο προϊόν, ενισχύοντας την άμυνα έναντι των παθογόνων μικροοργανισμών αλλά και το «πράσινο αίσθημα». Συγκεκριμένα στην εργασία αυτή σκοπός είναι η ανάδειξη της ωφέλειας πράσινων υλικών συσκευασίας για το φρέσκο τυρί τύπου cottage έναντι ισχυρών παθογόνων μικροοργανισμών όπως η Listeria monocytogenes και ο Staphylococcus aureus. Τα υλικά εμβάπτισης αποτελούν ο ζεόλιθος ενισχυμένος με θυμαρέλαιο (50%) και το μικρογαλάκτωμα ενισχυμένο με θυμαρέλαιο. Από την άλλη, το άλας αλγινικού οξέος σε αναλογίες 0%, 5%, 10% και 15% ενθυλακωμένου ζεόλιθου αποτελούν τα φιλμ. Τα αποτελέσματα που προκύπτουν φανερώνουν στατιστικά σημαντικά αποτελέσματα τόσο για τα υλικά ενσωμάτωσης, όσο και για τα φιλμ, με έμφαση το ζεόλιθο με θυμαρέλαιο και το άλας αλγινικού οξέος με ζεόλιθο σε αναλογία 10%.
Cheese is a basic product for human nutrition and the gradual increase in demand brings an overall growth for the cheese industry. Cheese contamination is a common phenomenon, a fact that has plagued the industry for decades. The growth of pathogenic microorganisms both during storage (especially when this occurs in the absence of proper packaging) and during transport, degrades the safety and quality of the cheese, causing significant losses for companies operating in this industry. Conventional packaging, however, is mostly based on petroleum-based materials (plastic). The modern demand of consumers for the reduction of preservatives and the reduction of dependence on plastic packaging, is in line with the present work, which in addition to films consisting of sodium alginate and zeolite its innovation lies in the presentation of materials that can be immersed directly in the product, strengthening the defense against pathogenic microorganisms and the "green mindset". In particular, the purpose of this study is to highlight the benefits of environmentally friendly packaging materials for fresh cottage cheese against strong pathogenic microorganisms such as Listeria monocytogenes and Staphylococcus aureus. The immersion materials are the zeolite fortified with thyme oil (50%) and the microemulsion fortified with thyme oil. On the other hand, the sodium alginate in proportions of 0%, 5%, 10% and 15% encapsulated zeolite are the films. Findings coming out, indicate statistically significant results for both the embedding materials and the films, with an emphasis on zeolite with thyme oil and sodium alginate with zeolite in a proportion of 10%.
