H προτεραιότητα στη βιωσιμότητα δεν αποτελεί επιλογή, αλλά ανάγκη. Για την αντιμετώπιση πολλών προβλημάτων είναι σημαντικό να ληφθεί υπόψη και το λιανεμπόριο τροφίμων που συνιστά έναν από τους μεγαλύτερους κλάδους της οικονομικής δραστηριότητας σε παγκόσμιο επίπεδο.
Δεν είναι απλό να μεταρρυθμιστεί ένα σύστημα στο οποίο ο κατακερματισμός δυνάμεων είναι έντονος. Ωστόσο, η πίεση από τα ενδιαφερόμενα μέρη δεν ήταν ποτέ ισχυρότερη, καθώς οι απαιτούμενες υπηρεσίες βιώσιμων προϊόντων και υπηρεσιών, αλλά και οι επενδυτές στρέφονται σε βιώσιμες επενδύσεις. Οι ρυθμιστικές αρχές επίσης, ως αποτέλεσμα εφαρμόζουν νέους και αυστηρότερους κανονισμούς βιωσιμότητας.
Η εφαρμογή της δυναμικής τιμολόγησης των ευπαθών τροφίμων, με βάση τα ψηφιοποιημένα δεδομένα, οδηγεί σε υψηλότερο κέρδος. Από την άλλη πλευρά, η δυναμική τιμολόγηση είναι ιδιαίτερα συμφέρουσα, όταν ο ρυθμός αποσύνθεσης είναι υψηλός, δηλαδή όταν η ποιότητα του προϊόντος μειώνεται γρήγορα.
Ο σκοπός της παρούσας πτυχιακής εργασίας είναι μέσω ενός ερωτηματολογίου 22 ερωτήσεων να απαντήσει σε ερωτήματα αναφορικά με την πρόθεση των καταναλωτών να αγοράσουν τρόφιμα τιμολογημένα δυναμικά κοντά στην ημερομηνία λήξης τους.
Τα αποτελέσματα δείχνουν ότι οι καταναλωτές είναι έτοιμοι να αγοράσουν με μεγάλη έκπτωση, καθώς επιζητούν να ενημερώνονται για την ποιότητα και για την τιμή των προϊόντων.
Στην παρούσα εργασία οι συμμετέχοντες δηλώνουν ότι παρακολουθούν στενά την πτώση τιμών που οφείλεται στην ημερομηνία λήξης, αλλά και ότι θεωρούν πιο βιώσιμη τη δυναμική τιμολόγηση ενός προϊόντος, έτσι ώστε να μην μένει στο ράφι, όπως άλλωστε φαίνεται και από έρευνες στη διεθνή βιβλιογραφία.
Prioritizing sustainability is no longer an option but a necessity. To deal with many problems, it is important to take into account food retailing, which is one of the largest branches of economic activity in the world.
It is not simple to reform a system in which the fragmentation of power is intense. However, the pressure from stakeholders has never been stronger as consumers demand sustainable products and services, investors turn to sustainable investments, regulators implement new and stricter sustainability regulations.
Consumers according to research findings make their purchase decision for discounted products by weighing the benefits and costs of the product. The results clearly show that applying dynamic pricing to perishable foods based on digitized data leads to higher profit. On the one hand, dynamic pricing is particularly advantageous when the decay rate is high, i.e. when product quality is rapidly declining.
The purpose of this thesis is, through a 22-question questionnaire, to answer questions
about consumers intention to buy dynamically priced foods close to their expiration date.
The results show that consumers are ready to buy a product with a deep discount as they search and would be positive in the presence of an application that would inform them about the quality and the price of the products.
In this work, the participants state that they closely monitor the drop in prices due to the expiration date, but also that they consider dynamic pricing of a product more sustainable so that it does not stay on the shelf, as is also evident from similar research in the international literature.
