Οι βηταλαΐνες είναι μία ομάδα φυσικών χρωστικών και έχουν κερδίσει το ενδιαφέρων έναντι των τεχνητών καθώς παρουσιάζουν υψηλή αντιοξειδωτική δράση και σταθερότητα στο χρώμα. Πραγματοποιήθηκε μελέτη του φραγκόσυκου ως χρωστική σε γέμιση μπισκότων.
Με την τεχνική του spray drying έγινε δυνατή η ενθυλάκωση των χρωστικών και η παραγωγή σκόνης φραγκόσυκου από το χυμό του για έπειτα χρήση ως χρωστική στην τελική συνταγή. Ποσότητα σκόνης του φρούτου συγκεντρώθηκε σε φιαλίδια και αποθηκεύτηκε σε τρείς διαφορετικές θερμοκρασίες των 25°C, 40°C και 60°C για διάρκεια 6 μηνών.
Στη πορεία παρασκευάστηκε η κρέμα με συνταγή που παραχωρήθηκε από την εταιρία ΠΑΠΑΔΟΠΟΥΛΟΣ. Συγκεκριμένα, παρασκευάστηκαν έξι συνταγές, μια που αποτελούσε τον μάρτυρα, η επίσημη συνταγή με σκόνη λεμονιού, και άλλες πέντε με διαφορετική αναλογία σκόνης φραγκόσυκου 0,1%, 0,5%, 1%, 3% και 6%. Τα δείγματα αποθηκεύτηκαν σε θερμοκρασίες των 25°C και 40°C για διάρκεια 75 ημερών με σκοπό την μελέτη των χρωστικών, των ρεολογικών χαρακτηριστικών και την υφή των προϊόντων.
Τα τελικά δείγματα επιβεβαίωσαν ότι η περιεκτικότητα των βηταλαινών παραμένει σε υψηλά επίπεδα και καθιστά το φραγκόσυκο μια επαρκή πηγή ενναλακτικών χρωστικών στα τρόφιμα.
Τα αποτελέσματα του χρωματόμετρου και στις δυο θερμοκρασίες έδειξαν τη σταθερότητα των χρωστικών με τις τιμές L να μην παρουσιάζουν διαφορές. Η ανάλυση υφής παρουσιάζει αύξηση της σκληρότητας του προϊόντος κατά την αποθήκευση.
Οι ρεολογικές δοκιμές έδειξαν πως στη θερμοκρασία των 25 °C το ιξώδες σε όλες τις κρέμες ταυτίζεται. Οι συντελεστές αποθήκευσης G’ και G’’ αυξάνονται και βρέθηκαν G’ > G’’, αυτό έχει ως συνέπεια μείωση της γωνίας δ από τις 45° και το προϊόν αποκτά πιο συμπαγή χαρακτήρα.
Betalains are a group of physical coloring substances; which in the past years have gained more interest against artificial coloring substances because they result in higher antioxidant behavior and better color stability. In the present project, research was conducted on the coloring substance in the biscuit filling from prickly pears.
Spray drying technique was used for the encapsulation of the coloring substances and the production of the powder from prickly pears, which was later used as the color substance in the final recipe. A proportion of the powder was stored in vials in three different temperatures of 25°C, 40°C, and 60°C for six months.
The filling of the biscuits was prepared according to a recipe provided by Papadopoulos A.E. Specifically, six recipes were prepared; the first one was the “control”, the official recipe with lemon powder, and five more with different ratio of prickly pear powder 0.1%, 0.5%, 1%, 3%, and 6%. The samples were stored in two different temperatures of 25°C and 40°C for 75 days studying the coloring substances, the rheological traits, and the texture of the products.
The final samples confirmed that the rate of betalains remains at high levels and makes it possible for prickly pears to be a sufficient alternative coloring substance in the food industry.
The chromatographer’s results in both temperatures (25°C and 40°C) showed the stability of the coloring substances as no difference was shown in the L values. The texture analysis showed an increase in the product’s stiffness during the storage of the product.
Rheological tests showed that in 25°C the viscosity was the same in all the filling samples. The modulus G’ and G’’ are increasing with G’>G’’, which results in a decrease of the angle δ below 45o leading to a more compact product.
